We’re all trying to eat a bit more healthy and a great place to start is with breakfast. However, we also want to indulge a little bit and at brunch with your friends, you can definitely do both. We’ve all had a smoked salmon and toast breakfast, but have you tried smoked haddock? Not only a bit cheaper, but with a distinct flavour, you’ll love this smoked haddock and cheese sauce breakfast as you also share it with your friends while having a mimosa or cup of coffee.

SMOKED HADDOCK AND CHEESE SAUCE SUGGESTIONS

The smoked haddock and onions take five minutes to make and come together beautifully, and you can add some fresh herbs. The cheese bechamel sauce is also very simple and is beautifully rich and smooth. If you want to add even more protein and breakfast flavour, some silky scrambled eggs turn this into a more fully-loaded breakfast. We suggest having some pan-fried ciabatta or sourdough bread toast with this delicious recipe. You can’t go wrong with a side of sliced avocado topped with salt, freshly ground pepper and a sprinkling of olive oil.

Smoked haddock and cheese sauce recipe

SMOKED HADDOCK AND CHEESE SAUCE RECIPE

INGREDIENTS

  • 6 fillets smoked haddock

  • 1 tbsp olive oil

  • 1 onion, diced

  • 1 tsp fish spice

  • 1 lemon (quartered)

  • 1/4 cup chopped fresh parsley

  • 1 tbsp butter

  • 1 tbsp flour

  • 1 cup milk

  • 1 cup grated cheddar cheese

  • salt and pepper

METHOD

  1. In a frying pan, heat the olive oil. Add the onion. Add the haddock. Flake it with a fork. Season with salt and pepper and fish spice. Squeeze one quater lemon over the fish. Let it simmer on low heat.
  2. In a saucepan, heat the butter. Add the flour. Add the milk gradulaly to make a sauce. Stirr until no lumps. Add the cheese. Season with salt and pepper.
  3. Add the haddock to the cheese sauce. Mix through.
  4. Serve a slice of toast, garnish with parsley.
