It’s time to bake some heartwarming sweet treats to enjoy while having a cup of tea or coffee. Share the love with these heavenly Hertzoggies.

We don’t always have time to go to a coffee shop with friends and enjoy a hot cuppa with a sweet treat. However, if you’re spending time at home and want something tasty, why not make some heavenly Hertzoggies? These traditional jam-filled tartlets or cookies with a coconut topping are commonly served on a cup-like pastry base and served with a hot cup of tea or coffee. They were especially popular with grandmas who made their own jam.

HEAVENLY HERTZOGGIES SUGGESTIONS

If you don’t have a patty pan, use a muffin tin which works just as well, especially a shallower one. Unless you’ve got a lot of arm endurance, whisk the egg whites to stiff peaks with a stand- or hand-mixer. When making meringue, make sure that there is absolutely no egg yolks in the mixture You can also add some pink food colouring to the meringues to make them suit the jam you’re adding too. You can use any jam you want to, but don’t overfill the cups.

HEAVENLY HERTZOGGIES RECIPE

These jam filled pastries with a coconut meringue topping are a true South African classic.

INGREDIENTS

  • 250 ml all-purpose flour

  • 15 ml sugar

  • 1/2 tsp salt

  • 1 tsp baking powder

  • 65 g cold butter

  • 2 egg yolks

  • 25 ml water

For the coconut meringue

  • 250 ml desiccated coconut

  • 100 ml sugar

  • 2 egg whites

METHOD

  • Preheat the oven to 180°C and grease a patty pan or muffin tray.
  • In a mixing bowl sift the flour, salt and baking powder together and rub in the butter with your fingers.
  • Add the sugar, egg yolks and water and knead to form a soft dough.
  • Roll the dough out to half a cm thickness and cut with a 7 cm small cookie cutter.
  • Press the dough into the tray and fill with jam.

  • Whisk the egg whites to stiff peak stage and add the coconut and sugar.
  • Add a tablespoon of the coconut meringue to cover the jam.

  • Bake in the preheated oven for 20-25 minutes until the hertzoggies are golden.

NOTES

For a healthier alternative replace apricot jam with diabetic jam and replace sugar with xylitol.
