Green Monday is a global movement promoted by Humane Society International (HSI), and South Africa is one of the first countries where HSI is introducing the concept.

Start your week by eating green and try this delicious Sago Crème Brûlée.  This vegan crème brûlée is a creamy vanilla-flavoured pudding made with plant and coconut milk and so delicious!

Vegan Sago Crème Brule Recipe:

Ingredients:

2 litres plant-based milk

1/2 cup coconut cream

3/4 cup brown sugar

1 cinnamon stick

¼ teaspoon cinnamon

¼ teaspoon nutmeg

2 teaspoons vanilla essence

3 tablespoons sugar for the top

1 cup sago

Instructions:

  • Combine the plant-based milk, coconut cream, sugar, cinnamon, nutmeg and vanilla in a deep pot and heat up over medium heat.
  • When the mixture becomes hot, but not boiling, add the sago and reduce the heat slightly.
  • Simmer the sago in the mixture until the sago becomes translucent, and the mixture thickens (about 20 minutes).
  • Once it is dense, remove the pot from the heat and cool for 5 minutes.
  • Remove the cinnamon stick.
  • Scoop into bowls or pretty cups, sprinkle the rest of the sugar on top and caramelize the with a kitchen blowtorch.

Tip: Play with flavours! You can add cacao to create creamy chocolate pots or toasted coconut flakes for a more tropical taste!
