Dinner doesn’t need to be a difficult experience, especially when you’ve had a long day at work, and have a family to cook for. These tasty veggies with parmesan cheese are easy to put together before cooking them any of 3 ways. They’re perfect in an air fryer, great in the oven or quick and easy in a pan. Get creative with the vegetables you choose and you’ll have a great dinner side or pre-cooked vegetables for your meals this week if you cook in advance.

TASTY VEGGIES WITH PARMESAN CHEESE TIPS

For this recipe, a delicious mix of red onion, butternut, baby marrows, green and red peppers were used. Other veggies that also work really well for this dish are corn spears, sliced fennel, mushrooms, broccoli, green beans, peas, asparagus or whatever you feel is still missing in the mix. You can also play around with the spices and adjust the seasoning to go with the vegetables you choose. This is great as a vegetarian dish but also perfect as a side for a roast dinner.

TASTY VEGGIES WITH PARMESAN CHEESE RECIPE

INGREDIENTS

  • 1 sliced red onion

  • 1 cubed butternut

  • sliced baby marrows

  • 1 chopped green pepper

  • 1 chopped red pepper

  • 30 ml olive oil

  • 1 tsp vegetable spice

  • salt and pepper

  • ¼ cup parmesan cheese

METHOD

  • In a frying pan, heat the oil and add the vegetables.
  • Cover the pan with the lid for 15 minutes, on low heat.
  • Season to taste and sprinkle parmesan cheese over the dish.
  • For roasting in the oven or air fryer
  • Combine the vegetables with the spices and parmesan before sprinkling with olive oil.
  • Roast in a preheated 180°C oven for 30-45 minutes or about 25 minutes in an air fryer.

NOTES

  • Serve warm.
